 Ingredients required for Kadai chicken


1 teaspoon coriander, seeds


1 Chili pepper(s), dried


½ tsp Cumin Seeds


½ cm cinnamon


2 tbsp oil


1 Bay leaf


2 clove(s)


16 Cardamom pods, green


400g Chicken breast fillet


1 teaspoon KadaiSpice Paste 


1 pinch(s) salt


1 tbsp lemon juice


2 large onion


2 large Tomatoes


1 small Pepper(s), green


1 cup water


½ tsp Garam Masala


¼ tsp turmeric


1 pinch(s) salt









Preparation of Kadai chicken




First, we prepare the Kadai masala (spice mixture) for our dish.


Add the coriander seeds, dried chili peppers ( use 1 pod for less hotter, but you can vary if you like it hotter), cumin seeds and the piece of cinnamon stick, dry-roast in a pan until you can smell the wonderful aromas. Then grind the roasted ingredients in a mortar to a coarse-grained powder.


 Ginger-garlic paste:



Mix 1 part ginger with 1 part garlic (I use 30 g each) in a blender with approx. 3 tablespoons oil to form a paste. Can be stored in the fridge for 2-3 weeks without any problems.




Wash and cut the chicken into large pieces and place in a bowl with half of the Kadai Masala made earlier, 1 tsp ginger garlic paste, lemon juice and some salt. Mix well and set aside.




Peel the onions and cut them into small pieces. Chop the coriander and coarsely puree the tomatoes. Heat the oil in a pan, wok or a suitable saucepan. Fry bay leaves, cloves and cardamom pods in it for about 1 minute. Be careful not to make it too hot, otherwise, the ingredients will burn quite quickly! Add onion and 2 teaspoons ginger garlic paste and sauté until onions are soft, about 2-3 minutes. Add remaining kadhai masala powder and mix well. Stew for another minute. Add the tomato puree and simmer over medium-high heat until the oil settles to the top, about 3-4 minutes.


Add the marinated chicken pieces, mix well, cover and continue to simmer for 3-4 minutes. Now add salt and water, cover and bring the curry to boil. Meanwhile, cut the peppers into bite-sized pieces. After 10-12 minutes, the chicken is cooked wonderfully soft, tender and deliciously juicy. At this point add the peppers and simmer for another 5 minutes over medium-high heat. Remove from the stove, add the garam masala and mix well.




Serve on a plate with rice and sprinkle with some freshly cut coriander.
